What is the best way to run my cable/ethernet cords in my apartment?

Just run the coax around the edge of the room to where your desk is and connect the router there. The coax can be tucked tightly into the corners making it mostly invisible, use white coax to match white trim. Use the covers you linked just in doorways if there are any.
